This Meatless Monday, it’s time to put something sweet on the table. Sweet potato recipes are perfect, from appetizer all the way to dessert. Naturally rich in vitamin A, Vitamin B6, potassium and fiber, sweet potatoes are an antioxidant powerhouse, perfect for helping to ward off those last winter colds and bouts of the flu. Orange sweet potatoes are particularly rich in beta carotene, so opt for these varieties whenever possible. Check out our very favorite sweet potato recipes before the season comes to an end!
Sweet potatoes make delicious French fries, and our sweet potato oven fries, are just as healthy as they are delicious. While French fries hardly seem like a complete meal in and of themselves, when they’re made with sweet potatoes, all you need is a big green salad to turn them into a Meatless Monday meal.

Sweet potatoes are the perfect ingredient for tender gnocchi. With less starch than a traditional potato, sweet potato gnocchi are less likely to become gummy. Perhaps the best thing about our sweet potato pancakes is that they’re just as delicious for breakfast as they are for dinner. Serve them with cinnamon-infused maple syrup for something sweet, and top with a fried egg for added protein and the perfect blend of sweet and savory. A touch of whipped cream and some fresh fruit, and they even make a fantastic dessert.
