Monday – Dinner for Two

Menu:

Spring Pea Soup Recipe with Mint and Toasted Pistachios

 Fresh Strawberry Granita Recipe

Menu Manager:

  1. The day before the dinner: make the granita
  2. The morning of the dinner:
  3. Make the soup. Let it cool and refrigerate
  4. Make the herb-and-lemon yogurt. Refrigerate.
  5. About 2 hours before serving:
  6. Roast the potatoes and set aside at room temperature
  7. Assemble the Salmon en Papillote and refrigerate
  8. About 30 minutes before serving:
  9. Preheat the oven and put the salmon in the oven to bake.
  10. Gently reheat the soup and potatoes.
