One great way to make winter squash the main event of your Meatless Monday table is by stuffing it. With most stuffed squash recipes, this idea allows you to serve one half-squash per person, easily portioning out dinner into a beautiful presentation.
The possibilities for stuffed squash fillings may in fact be endless, but to help you narrow things down and come up with a delicious recipe to serve this Meatless Monday, we've rounded up four of our very favorite stuffed squash recipes.
The first recipe combines sweet, creamy butternut squash with protein-rich pseudo-grain quinoa and woodsy mushrooms. Choose your favorite mushroom varieties, from simple crimini to rarer lobster or hen-of-the-woods mushrooms, to make this dish as flavorful as you like. A touch of Parmesan cheese highlights the natural umami afforded by the mushrooms.

This tasty stuffed squash recipe features roasted acorn squash and a farro, fennel, and feta stuffing. This alliterative recipe is also delicious, with the lovely hint of anise sweetness afforded by the fennel being balanced between the sweetness of the squash and the savory funkiness of the feta cheese. The farro adds a nice amount of bulk and a nutty, chewy factor that makes this dish effortlessly moreish.

Pizza lovers will pounce on this Italian-influenced stuffed squash recipe. Pattypan squash is a relatively mild member of the squash family, which is what makes it the perfect contender to stand up to a rich tomatoey sauce and a nice amount of gooey mozzarella cheese. While this recipe was created for a slow-cooker, you could also easily cook these squash in the oven for a richer, roasted flavor. Just be sure to add the mozzarella near the end to keep it from burning on the top of the squash as it bakes.
