We're breaking out our most colorful Meatless Monday meals this week, to add some sunshine and pigment to your meals -- for health, for flavor and perhaps above all... because first, you eat with your eyes!
The healthiest plate is a colorful plate! Each fruit and vegetable adds different vitamins and minerals to your lunch or dinner--meaning that often, the more colors you have at your table, the healthier your meal choice is.
This rainbow salad is a fantastically colorful lunch or dinner option. The recipe allows you to choose amongst a sea, land or garden version, and it's the latter that we love for Meatless Monday. Layers of colorful vegetables like beets, carrots, tomatoes and corn are stacked one on top of the other, seasoned with a citrus-ginger vinaigrette that adds a brightness of flavor that goes perfectly with the pigmented veggies. Take this one to work to brighten up your Meatless Monday lunch!

Let dessert be rainbow-colored as well! These superfood popsicles may look like the typical preservative- and dye-filled treats you find at the local supermarket, but these offer far more than meets the eye.
