Taste the Rainbow! 4 Meatless Monday Meals Full of Color

We’re breaking out our most colorful Meatless Monday meals this week, to add some sunshine and pigment to your meals — for health, for flavor and perhaps above all… because first, you eat with your eyes!
The healthiest plate is a colorful plate! Each fruit and vegetable adds different vitamins and minerals to your lunch or dinner–meaning that often, the more colors you have at your table, the healthier your meal choice is.
This rainbow salad is a fantastically colorful lunch or dinner option. The recipe allows you to choose amongst a sea, land or garden version, and it’s the latter that we love for Meatless Monday. Layers of colorful vegetables like beets, carrots, tomatoes and corn are stacked one on top of the other, seasoned with a citrus-ginger vinaigrette that adds a brightness of flavor that goes perfectly with the pigmented veggies. Take this one to work to brighten up your Meatless Monday lunch!

Rainbow quinoa makes the perfect base for this colorful dish, which combines the protein-packed grain with leafy green kale, deep red dried cherries, nutty almonds and a red wine vinaigrette. The rainbow quinoa holds on to its creamy white and deep red color, providing you with a salad that’s satiating and stunning on the plate to boot.

This is one of our favorite veggie dishes for the grill. These simple marinated vegetable kabobs combine all sorts of seasonal vegetables, like cherry tomatoes, bell pepper, red onion and summer squash. Soaked in a marinade of olive oil, garlic, lemon and fresh herbs, these kabobs are filled with the flavors — and colors! — of summer. Feel free to sub in any colorful summer veggies that you have on-hand!

Let dessert be rainbow-colored as well!
