Fabulous Fava Bean Recipe: 'Favafels' with Creamy Tahini Sauce

This fava bean patty recipe takes on a Mediterranean twist with tips from its chickpea cousin, the falafel patty. Serve these patties as appetizers with the tahini sauce as a dip, enjoy them on salads with a side of pita bread and hummus, or make mini vegetarian sliders with them!

Serves 4

Ingredients
1 cup soaked and cooked organic fava beans
1 large organic carrot, grated
1 small organic onion, minced
1/2 cup uncooked organic oats
1 large organic egg
1/4 cup organic parsley or cilantro, chopped
1 teaspoon organic ground cumin
1 teaspoon organic red pepper flakes
salt and pepper to taste
organic coconut or safflower oil for frying

Tahini Sauce
1/2 cup organic creamy tahini
1/4 cup organic lemon juice
water as necessary

organic parsley or cilantro as garnish
organic sesame seeds as garnish

Directions

Place the cooked fava beans, grated carrot, and minced onion into a food processor and pulse until the mixture turns into a chunky paste. Scoop the mixture into a bowl, and then add the oats and egg, folding them in with a rubber spatula. Continue to add the herbs and spices, making sure everything is evenly mixed.

Heat about 1/2 inch thick layer of oil in a frying pan. Once the oil is hot (but definitely not so hot it simmers), form a patty from the mixture with your hands. Place as many patties in the frying pan as you can fit. Let them cook on one side for 45-50 seconds (or until slightly brown and crunchy) before flipping them. Place them on a plate with a paper towel once they are done, and then transfer them onto a serving dish.

To make the tahini sauce, place the tahini in a bowl and pour the lemon juice on top. Mix with a fork or whisk until it thins.. Gradually add small amounts of water, continuing to constantly mix the sauce, until it reaches your desired consistency. If you are serving the sauce as more of a dip, you can omit the water completely and even cut down on the amount of lemon juice. Place into a serving dish, sprinkle cilantro and/or parsley, and sesame seeds before serving.
