1. Mustard Greens Soup

Serves 4


  • 4 cups mustard green leaves
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 2 medium russet potatoes, peeled and diced
  • 2 sprigs fresh thyme
  • ½ cup coconut milk


Heat a saucepan over medium heat. Add the oil and shallot. Sweat the shallots for about 3-4 minutes, or until translucent. Add the garlic and cook for another minute. Add the potatoes, thyme, and 4 cups of water. Cover with a lid and bring the mixture to a boil. Once boiling, reduce heat to a simmer and let cook for 20 minutes. Stir in the mustard greens and cook for another 5 minutes, or until the leaves are wilted and tender.

Remove the thyme sprigs. Let the mixture cool down before adding to a high-speed blender along with the coconut milk. Blend the soup until creamy and smooth. Reheat or enjoy chilled.

2. Mustard Greens and Cucumber Sandwich

Serves 2


  • 4 slices of multi-grain bread
  • 2 ounces of cream cheese (or vegan cream cheese)
  • 1 medium cucumber, thinly sliced
  • 2-4 mustard green leaves
  • Salt and pepper to taste


Slather each slice of bread with cream cheese and top each with sliced cucumbers and mustard greens. Season with salt and pepper and serve open-faced.

3. Mustard Greens and Spinach Dip

Serve 4


  • 1 pound spinach
  • 1 bunch mustard greens, coarsely chopped
  • 1 tablespoon olive oil
  • ½ cup finely chopped onion
  • 1 ½ cups Greek yogurt
  • Zest of one lemon
  • Juice of 1 lemon
  • Salt and pepper to taste


In a saucepan over medium heat, add washed spinach and mustard greens and cook until wilted. Once wilted, set aside, and set aside. In a separate saucepan, add the olive oil and onion. Cook until translucent. Set aside and let cool.

In a bowl, whisk together the yogurt, lemon zest, and lemon juice. Add in the spinach, mustard greens, and onion. Season with salt and pepper and serve alongside crackers or vegetable crudités.

4. Mustard Greens Salad with Avocado and Mango

Serves 4


  • 1 cup mustard greens, chopped
  • 2 avocados, halved, pitted, and sliced
  • 1 mango, peeled and sliced
  • 1 jalapeno, stemmed, seeded, and diced
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup
  • Juice of 1 lime
  • 1 garlic clove, minced


Whisk together the olive oil, maple syrup, lime, and garlic in a small bowl. In a large bowl, add the mustard greens. Pour the dressing over the mustard greens and use clean hands to massage until all the salad ingredients are evenly coated. Toss in the avocado and mango and serve.
