St. Patty's Day Eggs Recipe: Shamrock Eggs!

It doesn't take a top chef or anyone particularly inclined in the kitchen to concoct this number. St. Patrick's Day is all about green, which means if you are of the festive ilk, you should dress in green, decorate green and eat green things. This eggs recipe is inspired not only by the color green but by the shape that so perfectly sums up the symbol of St. Patty's Day: the four leaf clover. The green bell pepper works its edges to create a clover-like appearance, whilst the egg fills in the center. Enjoy!

The green bell pepper has a shamrock appearance when cut across its width into thin pieces. But, it's not like you want to pop green bell peppers for breakfast - celebratory St. Patty's Day morning fare requires more bulk. The addition of the eggs keeps the meal full of protein and healthy fats, while the green pepper contains the eggs in one place, so that they are not spilling over the edges - your serving sizes are set and ready to eat!

Shamrock Eggs for St. Patrick's Day

Serves 2


  • 1 green bell pepper
  • 4 eggs
  • 1 teaspoon olive oil or butter
  • Few dashes of dried dill
  • Few dashes of red pepper flakes
  • Salt and pepper to taste

Bring a pan to medium heat. While it warms, cut a bell pepper across its width into 1/2-inch thick slices. Remove any flesh or seeds, making sure the edges are connected in one continuous, jagged circular loop. Reserve 4 of these "shamrocks". Grease the bottom of the pan evenly with olive oil or butter. Place the bell pepper slices onto the pan, each with its own space. Cook for 1 minute before cracking an egg carefully into the center of each shamrock. Season with salt, pepper, dill and red pepper flakes. Cook until the egg is done to your liking.
