Love the rotisserie chicken from your local wholesale club, but worried about the recent rotisserie chicken recall? Try this delicious, healthy (and gluten-free) slow cooker chicken recipe instead! Covered in savory herbs, this slow cooker chicken recipe is so easy and frugal, you may never go back to the store-bought rotisserie. And you can use the leftover bones and meat to make chicken noodle soup!
Slow Cooker Chicken Recipe

Prepare a large, 6-quart slow cooker by coating the bottom and sides with coconut oil. Skin your chicken and remove the neck and cavity organs (stick those in the freezer to make gravy or stock another day).
Combine the spices in a bowl and mix. I’ve actually made this so frequently that I just mix up a big spice jar filled with “Rotisserie Seasoning.” I shake enough on to coat the bird, about 2 tablespoons and call it a day. If you want to make your own, just quadruple the spices (or more if you have a larger spice container) and label the jar.
Rub the spice blend all over the chicken (inside and out). Place the onions and garlic inside the cavity of the chicken.
Place the chicken, breast side down, in the slow cooker.
Cover, cook on HIGH 4 hours or LOW for 8 hours.
This slow cooker chicken will come out so incredibly tender the meat will literally fall off the bones. Check that your slow cooker chicken is done and as tender as you desire. Serve to your amazed family.
