Summer is the time for laziness. It can be quite difficult to work up the energy to make a meal when lounging on the porch is just so darn easy. Well, we want to help you to keep from starving (or just shoveling watermelon flavored Oreos into your piehole), so we’ve rounded up 3 healthy summer meals you can make quickly without expending too much effort.

Healthy summer meals include summer salads

Quick Kale Salad

If I want to eat, like, now, I make this salad. It’s easy to assemble and is ready in about 10 minutes. It also tastes incredibly fresh—perfect for late, summer dinners.

Serves two

Ingredients

Bag of organic kale bought from the store, or freshly cut kale from the garden
1 organic red pepper
1 cup of cut organic broccoli
2 cups of cut organic carrots
Ginger, pepper, and soy sauce to taste

Directions

Cut all veggies and add to a hot pan. Cook for about 5-10 minutes or until the vegetables are lightly softened. Add ginger, pepper, and soy sauce to taste. Once cooked, add the vegetable combination to the kale. Toss the mixture and serve immediately.

Healthy summer meals can be easy to make.

Fresh, Fun, and Fast Taco Wraps

Serves two for a light meal

Tacos without shells are fun to eat and satisfying to consume when the heat outside gets too hot. We suggest making this meal as a quick lunch before heading out to the pool for cocktails—it’ll give you sustenance sans bloat.

Ingredients

Two large leaves of organic Romaine, Iceberg, or Butter lettuce
2 cups fake meat (make your own, or use pre-made stuff bought from the store)
1/2 cup organic onions
1/2 cup organic tomatoes
1/2 cup organic peppers
Organic cilantro to taste
Salt and pepper to taste
Organic salsa (make your own, or use some from the store)

Directions

Pick your favorite leafy green shell from the garden—Romaine, Iceberg, and Butter lettuce work well—and fill them to the brim with quickly sautéed (5-10 minutes on the stove on medium heat) onions, peppers. While sautéing the vegetables, quickly heat up your fake meat in the microwave or the stove-top (5-10 minutes), too. While everything is sautéing, cut up a tomato and open your salsa. Once everything is ready, start by first adding a layer of the fake meat on the bottom of the lettuce, followed by the sautéed vegetables, fresh tomatoes, and salsa. Finish by adding salt and pepper to taste, and a bit of fresh cilantro.

Healthy summer meals to satisfy all cravings.

Speedy Summer Frittata

This is my go-to meal when I’m craving protein like a fiend. The prep is fast and it cooks up quickly. Perfect for a light, summer dinner, or a lazy, summer brunch.

Ingredients

5-9 organic eggs
2 small organic mushrooms, diced
1/2 organic heirloom tomato, diced
1/2 organic zucchini, diced
1/2 organic red bell pepper, diced
Salt and pepper, and olive oil to taste
Fresh organic basil, rosemary to taste
Cut kalamata olives to taste

Directions 

Quickly dice all of the vegetables and add to a lightly oiled pan. Heat everything on medium heat for about 5 minute, or until the vegetables are slightly limp. While the vegetables are cooking, crack all the eggs and mix in a bowl. Once combined, pour into the pan and stir in some salt and pepper. Cover with a plate for about 15-20 minutes, or until the frittata is set in the center. Cut the frittata into 4-8 pieces after the pan has cooled a bit, and add a few pieces of rosemary, olive, and basil on top of each slice.
