Strawberry Rhubarb Frozen Yogurt Recipe

The traditional combination of strawberries and rhubarb come together yet again in this unique but ridiculously simple frozen yogurt recipe. Making a tangy or sweet version is easy, as you can add or reduce as much sweetener as you like. Using homemade yogurt will ensure the freshest flavor, but store bought yogurt will work just fine. Investing in an ice cream maker is a great idea if you like to experiment with your own frozen desserts, or you can check out these other methods for making fro-yo and ice cream at home. Kids will love this healthy treat, which is also the perfectly refreshing snack or light dessert on a hot day.

Ingredients
2 cups fresh organic strawberries, halved
1 cup fresh organic rhubarb, sliced into ¼ cubes
2 tablespoons raw honey or agave nectar
pinch of salt
3 cups homemade (or store bought) organic yogurt
¾ cup raw honey or agave nectar
2 teaspoons organic vanilla extract

Method
In a small saucepan combine the fruit, 2 tablespoons of honey and salt. Bring to a simmer and turn your burner to its lowest setting, allowing the fruit to cook until it is tender and the sauce has thickened. Set aside to cool.

Mix the yogurt, honey and vanilla in a medium size bowl and freeze in an ice cream maker according to the manufacturer’s instructions. Once ready, pour the yogurt mixture into the container you want to store it in, swirling in 2/3 of the strawberry rhubarb sauce.

Allow the fro-yo to harden for a few hours in the freezer before digging in. Serve with some of the leftover sauce for a kid-friendly snack or alongside a dessert wine such as a Muscat or a sweet Gewürztraminer.
