Chow Down Fast with 30-Minute Meals: 4 Recipes for Meatless Monday
Sometimes, you just need to get dinner on the table fast, especially on Meatless Monday. But that’s no reason not to have a delicious, healthy dinner anyway. Healthy food can be quick and simple to prepare; these 30-minute meals are full of nutrients, flavor, and seasonal ingredients, and they’re just as beautiful and impressive as many meals that take hours to cook. No one will be able to guess how quickly you got dinner on the table.
We love this watermelon radish salad because it allows you to use the whole radish — bulb and greens. You could even use the whole carrot, if you like, though only the greens are called for in the recipe. The radishes are quick-pickled for a bit of tang, while a creamy vegan cashew dressing adds richness. Bright, bitter carrot and radish greens add color and nutrients. Scatter some fresh berries over the top if you need a bit of sweetness to round this salad out. You can make this recipe even faster if you take the time to pickle the radishes and mix up the dressing the night before.

This super-quick bok choy stir fry recipe is one of our favorite 30 minute meals. It’s packed full of vegan protein, thanks to its quinoa base, and the sauce is simple yet flavorful, with tamari, organic chili sauce, rice wine vinegar, and sesame oil. The lightly sautéed bok choy, seasoned with garlic and ginger, remains perfectly crisp and light in the final dish.

Salads are the perfect place to combine a variety of seasonal ingredients. This seasonal salad is a mix of presoaked farro, which is quick to cook, thin, fresh asparagus, sweet strawberries, mandarin oranges, and sliced almonds. A touch of feta cheese adds tanginess, but for a vegan version of this salad, you could just as easily leave it out: the cider vinegar and lemon dressing, seasoned with Dijon mustard, garlic, and shallot, adds more than enough zing.
