3 Grilled Recipes…for Breakfast?
Grilling is the summer go-to for dinner and lunch, but what about breakfast? Fire up the grill in the morning and enjoy fthese delicious grilled recipes for breakfast and brunch options that are so easy and tasty you’ll want to trade in your toaster for good.
Grilled Breakfast Burritos
A savory, filling breakfast can be had with these sausage burritos. Vegetarians can leave out the sausage altogether or sub with a vegetarian breakfast patty.
Serves 2
Ingredients
2 wheat or corn tortillas
2 organic sausage patties
1 avocado, sliced
2 organic eggs
salt and pepper to taste
Fire up the grill, and grill the sausage patties on both sides until cooked through. Slice each in half and arrange both halves on the tortillas.
Place the tortillas on pieces of aluminum foil. Place the avocado slices on top of the patties, forming a wall into which to crack the raw eggs. Carefully crack the eggs into the center of the tortilla. Fold the tortillas like burritos, closing the bottom before wrapping the tortilla around itself. Use the foil to wrap up the entire burrito, and place on the grill. Grill 2 minutes per side (a bit more if you like your eggs hard cooked).
Grilled Fruit and Grilled Toast
This simple option is pretty quick and easy, though you do still need to fire up the grill. For a lighter grilled breakfast option, this is a keeper, and you can change up the grilled fruit according to your preferences. Serve with yogurt for a well-rounded meal.

Ingredients
1/4 pineapple, sliced into 1/4-inch thick slices, brushed with a small amount of olive oil
2 slices homemade or organic bread
1 Tbsp. softened butter
Place the pineapple on the grill, turning once for pretty grill marks. Spread the butter on both sides of the bread, and grill until grill marks form.
Breakfast Grilled Cheese
Grilled cheese for breakfast? When the cheese is ricotta and it’s accompanied by organic or homemade jam, why not? This delicious, sweet option is a guilty pleasure, for sure.

Ingredients
4 slices homemade or organic bread
2 Tbsp. softened butter
4 Tbsp. ricotta cheese
2 Tbsp. homemade or organic jam
Spread each slice of the bread with butter on one side. On the dry side, spread the ricotta evenly over the four slices. Top two slices with jam, and combine the slices to make sandwiches. Grill on both sides until grill marks form.
