Meatless Monday Recipe Roundup: Creativity Flows

We’ve already been celebrating Earth Day for a week now, and we have no plans to stop! It’s just the perfect time of year to honor the people who have devoted their lives to sustainable, organic food that nutures us all. From chefs to farmers, we continue to be inspired by their stories, their ideas and, most of all, their convictions. This week, we’ve rounded up some of the most innovative vegan and vegetarian recipes to come out of the Earth Day blogosphere. These dishes celebrate some more brilliant minds and some major out-of-the-box thinking.

The Umami Girl unveiled Deconstructed Hummus Chickpea Salad this week. Her take on this party favorite retains all of the delicious flavors of hummus with a whole lot more texture and crunch. And this dish definitely deserves a spot at your Meatless Monday dinner table!

Over at Olives for Dinner, Blogger Erin says, “I am a 30-something amateur vegan cook married to a ‘meat and potatoes’ kind of guy.” We’re not sure how her husband will feel about her take on vegan sushi, but this dish has us swooning: Faux-Roe Gunkanmaki with Pickled Daikon. Pretty crazy stuff. 

Not only is this dessert gluten free, it’s deliciously insane! The White Chocolate Pistachio Gianduja from Brave Tart is like, in her own words, “white chocolate pistachio Nutella, but more awesome, more versatile.” Give us a spoonful of that. Or two.
