As summer comes to a close and the kids are starting to head back to school, we turn our sights to portable lunch recipes for the rest of the year, particularly when it comes to planning meals. It doesn’t take much effort to plan ahead for healthy, delicious meals that you and the kids can take with you every morning, and it’s worth the bit of extra effort when it comes to cost and health. We’ve got four portable lunch recipes from all over the Internet. And what’s more, for Meatless Monday, we’ve made sure that our list contains only the best in meatless portable lunch recipes. If you’re looking for a recipe that will satisfy everyone in your family, even the pickiest of eaters, our Crunchy Elvis Sandwich is definitely the way to go. This healthier version of the traditional Elvis sandwich, made with bacon, uses granola for the characteristic crunch. The sandwiches are meant to be served warm, but they’re just as delicious cold if you don’t have a hot plate at work and for the kids’ brown bags.
Because of allergies, a lot of schools nowadays are banning peanut butter from their cafeterias, and there are even no-nut workplaces. If the Elvis sandwich isn’t possible for you to send to school, try a more sophisticated spin on the Greek salad, thanks to chef Jamie Oliver. This version foregoes more traditional anchovies to ensure a completely meatless salad that has tons of delicious veggies. The simple dressing can be prepared in advance and kept aside until you’re ready to eat. Give kids a tiny tupperware container to use to drizzle it over the top.

Our next lunch idea requires a bit more assembly, but it’s totally worth it. Vegan lettuce wraps are stuffed with Asian-flavored tofu and accompanied by a peanut dipping sauce. Of course, you’ll have to bring all three elements in separate containers and put them together when you’re ready to eat. But this delicious dish is more than worth it, and it’s definitely one that will please the whole family!
