Pumpkin isn't quite as starchy as some other winter squash like butternut. Its texture makes it ideal for puréed recipes or recipes that are cooked down to a mash. Because of its texture, pumpkin is frequently used in autumnal soups -- we've got a suggestion! -- but that's far from the only way you can integrate pumpkin recipes into your Meatless Monday meal.
