Meatless Monday Roundup: 4 Pumpkin Recipes

Fall is well underway, and you’ve likely got more pumpkins than you know what to do with decorating your front stoop and stockpiled in the pantry. Pumpkin isn’t quite as starchy as some other winter squash like butternut. Its texture makes it ideal for puréed recipes or recipes that are cooked down to a mash. In sweeter dishes, it’s usually spiced up with cinnamon, cloves and nutmeg. In this pasta, both spice and savoriness are on the menu. The creaminess in this recipe comes from yogurt as opposed to cream, which makes it a perfectly guiltless Meatless Monday treat.
