Meatless Monday Roundup: 4 Zucchini Recipes

The time has come when zucchini are seen as a near-infestation. There’s an old joke that says that people in the country leave their car doors locked in the summertime so no neighbor will sneak in with a zucchini “gift.” But if you have zucchini growing wild in your garden, the time has come to find some new vegetarian recipes to use them in… and when better than Meatless Monday?

Our very own roasted tomato and zucchini salad is perfect for summertime. The tomatoes, zucchini and buffalo mozzarella are stacked high on the plate, for an impressive appetizer that’s easy enough to make one a weeknight and beautiful enough for serving to guests. A simple vinaigrette is all it needs.

Instead of processed store-bought veggie burgers for your next cookout, these zucchini patties are perfect. Not only are they meatless; they’re actually vegan! Just zucchini, mushrooms, onion and some herbs — plus a bit of breadcrumbs to hold them together — and these patties are ready to be enjoyed.

For another revisted all-American favorite, zucchini pizzas are perfect! While pizza was born in Italy, it’s a favorite Stateside; even meatless versions can be much too heavy for summertime, but this version, with a zucchini base and even more veggies on top, is perfect this season.

For dessert, we can’t forget about classic favorite zucchini bread. Our version has cinnamon, nutmeg, raisins and nuts, so there are lots of flavors and textures in each and every bite.
