4 Bright and Fresh Vegan Salad Recipes for Meatless Monday

It’s easy to get sick of salads: you get into a rut, and suddenly, it feels like if you eat one more bowl of greens, you’re going to choke. That’s why every once in awhile, it’s nice to have a reminder of just how many different types of salad there are. With fresh, organic produce, there are endless variations on delicious vegan salad recipes that you can enjoy. Here are just a few of our favorites.
1. We love this green goddess salad, and not just because of its fantastic name. Don’t get us wrong — we love colorful salads that make the most of different vitamins and minerals all in one bowl, but there’s something so satisfying about a big bowl of green: in this case, avocado, cucumber, broccoli, cabbage, green grapes for a touch of sweetness, and nutty pistachios. A simple lemon and extra-virgin olive oil dressing tops off this salad, and it’s time to dig in.

2. This vegan sushi salad makes a star of protein-rich tofu with a flavorful marinade. Soak the tofu in the mix of sesame oil, tamari, rice vinegar, garlic, chili, and ginger the night before, so that it’s nice and packed with flavor. Prepare the seasoned brown rice and veggies at the same time, and simply top with the marinated tofu for a simple, delicious vegan salad recipe.

3. How can you make tabbouleh even better? By making it with quinoa, of course. This quinoa tabbouleh sticks fairly close to the original recipe, but it also boasts added nutrients thanks to the use of the protein-rich pseudo-grain in place of the more traditional bulgur wheat. Be sure to use fresh, organic herbs for loads of flavor.

4. Barley forms the base of this tasty herbed salad, flavored with fresh tomato, frozen corn, spinach, and cilantro. Almonds add bulk and heartiness to this salad, which is seasoned simply with extra-virgin olive oil and balsamic vinegar. If fresh corn is available where you are, by all means, toss it into the salad instead.
