4 Healthy Roll and Wrap Recipes for Meatless Monday

Wraps, burritos, rolls – whatever form they come in, there’s something so alluring about dinner being served as a little packet of delicious ingredients. We’re highlighting just a few of our favorite wrap recipes for Meatless Monday: dishes that come together quickly enough for a weeknight and unite together flavors, textures, and colors in an irresistible form.

As spring quickly approaches, these rice paper wrapped rolls from Blissful Basil are quickly becoming one of our favorite wrap recipes. A combo of bright green ingredients unite in these verdant rolls, from creamy avocado to fresh spring asparagus to herbaceous chives. Dip them in an herbed tzatziki for even more flavor.

One of our fave Mediterranean dishes is Greek-style stuffed grape leaves, and believe it or not, dolmades are actually pretty simple to make at home. Jarred grape leaves are stuffed with a slightly sweet and nutty rice mixture mixed with pine nuts, lemon, mushrooms, olives, raisins, and dill. Add a bit of feta, if you like, or keep it out for a vegan version of these rolls. One of our favorite things about this recipe – aside from its delicious flavor – is that it’s easy to make ahead and pull out of the fridge at the last minute to enjoy alongside a simple chopped Greek salad.

Thai-style lettuce wraps are the perfect Meatless Monday choice when the wraps are stuffed with crunchy pecans. This vegetarian adaptation of the Thai classic is made with a slightly sweet vegan filling, seasoned with tamari, honey, ginger, and garlic. Garnish them with cilantro and chili for the perfect little bites.
