4 Ooey-Gooey Vegan Cheese Recipes for Meatless Monday

Meatless Monday isn’t just a great day to go meat-free — it’s also a good time to try out some dairy-free vegan recipes. After all, whatever your reasons for eating less meat — be they ecological or humane — you’re only doing more when you cut out animal products entirely. This week, we’ve rounded up some of our favorite vegan comfort food recipes, all featuring vegan cheese.
Queso is a Tex Mex favorite, but this version contains none of its namesake ingredient. Instead, a combination of carrots, onion, garlic, cashews, and nutritional yeast is blended together for a vegan version of the classic dip. Adobo sauce from canned chipotle peppers adds just the right amount of heat to this dish, which is delicious served with corn chips, crudités, or both.

Cheese and potato soup is one of our favorite cold weather comfort food dishes, and this vegan version is no exception. Yukon gold potatoes form the creamy base of this soup: with more beta carotene than white potatoes and a silkier texture, they’re by far the best choice. Seasoned with onion, garlic, and a nice amount of nutritional yeast for that cheesy flavor, this soup will definitely keep everyone coming back for more.
