4 Totally Unique Avocado Recipes for Meatless Monday
Avocado toast has had its day in the sun, but just because the trend is on the way out doesn’t mean we’re forgetting all about this creamy fruit. Avocado is loaded with healthy fats and more potassium than bananas, not to mention it’s positively delicious. For Meatless Monday, we’ve united four of our favorite avocado recipes that use this fruit in a completely unique way.
When coated with panko and oven-baked, avocado becomes the perfect stand-in for fries. Lime juice will help preserve the green color of these avocado fries and also add a bit of a zingy flavor. They’re delicious when dipped into your favorite sauce — ketchup, mayonnaise, or even a homemade chipotle sauce, the recipe for which you’ll find alongside the fry recipe.

This cold soup combines avocado and coconut milk for a luxuriously creamy base. Seasoned with dill, lime juice, and sriracha and garnished with fresh tomato, this soup is perfect in place of another cold soup like gazpacho, as an appetizer or even with cocktails, served in little shot glasses.

Avocados are perfectly shaped to be turned into their own tiny little serving dishes, and this vegan Mexican taco boat is the perfect place to start. The grilled avocados are stuffed with a filling inspired by Mexican street corn, made with a vegan cashew sour cream, corn, cilantro, red onion, and roasted jalapeño. A little bit of lime, and this dish is ready to serve.
