This recipe transforms cauliflower into a slightly sweet, tender base that welcomes the rich sauce of Gruyère and Parmesan.

Cauliflower Cheese Recipe Steps

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Steam the cauliflower florets until tender, but firm. Drain.
  3. While the cauliflower steams, melt the butter in a saucepan over low heat. Add the flour and stir continuously to make a roux. Slowly add the heavy cream and whisk until thickened.
  4. Remove from the heat and add cheese, salt, and pepper to taste.
  5. Ladle half of the cheese sauce into the bottom of a baking dish for the best part of this cheesy cauliflower recipe. Place the drained cauliflower on top, and spread with the remaining sauce. Top with extra Gruyere and Parmesan.
  6. Bake for 20 to 25 minutes, or until the top begins to brown. 
  7. For a toasty top layer, crank up oven to 500-550 degrees for 3-5 minutes.
  8. Serve directly from the oven or at room temperature. Enjoy.
