With spring schedules underway a healthy snack for adults and kids might be the MVP families are missing. With bountiful in-season strawberries and four other pronounceable, natural ingredients, these strawberry lemon gummies are the perfect anytime snack fit for the entire family.

Strawberries

A good source of vitamin C, with one serving offering roughly 150 percent of the body’s daily requirement, strawberries are also a source of potassium, folate, and manganese. Mainly made up of simple sugars and fiber, strawberries have a low glycemic index meaning these berries won’t cause extreme spikes in blood sugar levels. High in antioxidants, strawberries are abundant in a compound called anthocyanin, with more than 24 different anthocyanins found in these delicious red berries. Studies have found that anthocyanin-rich foods lower the risk of heart-related health problems.

Beef Gelatin

Studies state that gelatin can increase collagen moisture and density of the skin as well as support hair thickening, but the properties of gelatin far exceed what it can do externally. Gelatin is a product derived from collagen, the most abundant protein found in animals and humans. Research has shown that gelatin supports joint health, brain function, and gut health. A study of osteoarthritis patients who took a gelatin supplement reported a significant reduction in joint pain and stiffness. Rich in the amino acid glycine, linked to brain function, a study found that glycine in gelatin significantly improved attention and memory. A separate amino acid found in gelatin, called glutamic acid, converts to glutamine in the body. Glutamine is shown to enhance the integrity of the gut wall and prevent “leaky gut,” which is when the gut wall becomes too permeable, allowing harmful bacteria to pass from the gut to the bloodstream. This condition is said to contribute to gut problems such as irritable bowel syndrome (IBS).

High-powered blender
Fine mesh strainer
Silicone Mold
Whisk

  1. Measure out gelatin. Set aside. 
  2. Remove stems from strawberries and juice lemon. Place strawberries and lemon juice into a blender with a half cup of water. Blend until smooth. 
  3. Once blended, remove unincorporated pulp and seeds by pouring the strawberry lemon puree through a fine mesh strainer over a medium pot.
  4. To the medium pot, add honey. 
  5. Place pot on stove and turn burner to low heat, barely warmed. Do not get the mixture too hot, or the gelatin will not incorporate. 
  6. Slowly incorporate gelatin and simultaneously whisk to combine with strawberry lemon puree. NOTE: If the pot appears to be getting too warm, turn down the heat. Turn off the burner once all gelatin is whisked in.
  7. (Optional) If there is excess foam from whisking, allow the puree to sit for 1 to 2 minutes before moving to the next step.
  8. Pour mixture into a silicone mold or a parchment-lined baking dish.
  9. Place in the fridge to set for a minimum of 30 minutes and up to 2 hours (recommended) to achieve maximum firmness.
