4 Vegan, Gluten Free Breakfast Cookie Recipes
These yummy breakfast cookie recipes are crazy simple to make, and crazy delicious. My favorite version of the breakfast cookie recipe is one of the simplest to toss together. All you need are 2 ripe bananas, 1 cup of oats and 1/4 cup of crushed walnuts. The kids love to help mix these cookies up and especially love the fact that they can eat them almost any time since they’re so healthy. These cookie recipes are naturally vegan and, if you use gluten-free certified oats, also gluten free.
1. Healthy 3-Ingredient Breakfast Cookie Recipe
Serves 8, about 16 cookies
Ingredients
Method
Preheat oven to 350 degrees Fahrenheit.
Mash your bananas in a medium bowl. Mix in oats and then fold in walnuts.
Prepare a greased cookie sheet and spoon mixture by the tablespoonful onto the cookie sheet (about 16 cookies). Flatten the cookies a bit with your tablespoon if you like. These cookies will not spread.
Bake for about 15 minutes. Remove from pan and let cool.
2. Pumpkin Spice Breakfast Cookie Recipe
Serves 8, about 16 cookies
Ingredients
Method
Preheat oven to 350 degrees Fahrenheit.
Mix all ingredients except cranberries together in a medium bowl, then fold in cranberries.
Prepare a greased cookie sheet and spoon mixture by the tablespoonful onto the cookie sheet (about 16 cookies). Flatten the cookies a bit with your tablespoon if you like. These cookies will not spread.
Bake for about 15 minutes. Remove from pan and let cool.
3. Chocolate Chip Breakfast Cookie Recipe

Bake for about 15 minutes. Remove from pan and let cool.
