How to Make an Ice Cream Sandwich at Home: Ingredients

We love chocolate chip, but you can pretty much use any cookie recipe that you like. We’ve already given you some ideas.


Organic Ice Cream

Choose your flavor. Keep it vanilla for the biggest (safest) crowd pleaser.

You can use rice, avocado, banana, or coconut ice cream for this recipe if you want to make it vegan.

Mix Up Your Mixers

Stick with mini chocolate chips or mix it up with crushed nuts, seeds, coconut shreds, crushed graham crackers, or sprinkles for edge rolling.

How to Make a Homemade Ice Cream Sandwich

Once you’ve prepared the cookie dough, bake your cookies until they are just set (try not to over bake them). They shouldn’t still look like goo, but don’t let them harden up too much. Place the cookies on a wire rack for only about five minutes.

While the cookies are cooling, take the ice cream out of the freezer and take it out of the container in strips or blocks approximately the size of one cookie using a butter knife. You don’t want to scoop the ice cream out with an ice cream spoon, since you want the ice cream to fit in between the two cookies.

Now to make the sandwiches. Take one cookies, gently lay the ice cream strips on the cookie and press a second cookie on top. You’ll have to do this quickly because the ice cream will melt rather fast! If using any of the optional ingredients, roll the cookie sandwiches in them now so the ingredients stick into the ice cream.

If you do want to store your ice cream sandwiches for future enjoyment, you can freeze them.

  • Let the cookies cool for a bit longer than 5 minutes so they aren’t too hot when you make the sandwiches.
  • Once you’ve put an ice cream sandwich together, wrap it individually in plastic wrap and place it in the freezer, where they’ll keep for a few months.
  • Make sure to underbake your cookies though, as this way they will still be chewy even if you freeze them.
