Roasted Beet Salad Sandwich Recipe with Caramelized Onions and Goat Cheese

Beets are in season, and they’re packed with healing nutrients. Why not give this beet salad sandwich recipe a try for your next vegetarian meal? Whether for vegetarian guests or Meatless Monday, the tasty combination of roasted beets, caramelized onions and goat cheese is sure to be a hit.
Beets contain a cancer-fighting pigment betacyanin, which gives the root vegetable its reddish-violet color. Beets also are filled with potassium, magnesium, fiber, phosphorus, iron, vitamins A, B and C, beta-carotene, beta-cyanine, and folic acid

Method
Preheat oven to 375 Fahrenheit.
Toss beets and onions in olive oil, salt and balsamic vinegar.
Spread beets and onions on an oiled cookie sheet or baking dish. Roast for 25 to 30 minutes, stirring once, or until beets are fork tender and onions are caramelised. Dish beets into a bowl and mash, if desired.
Mix goat cheese and honey together in another bowl and then mix with beets. Salt to taste.
Spread mixture on whole-grain bread and serve.
