1. Blueberry Pineapple Salsa

Serves about 8

Ingredients:

Directions: Add all ingredients to a bowl and toss until evenly combined.

2. Roasted Tomatillo Salsa

Serves about 8

Ingredients:

Directions: Remove the outer papery covering from the tomatillos. Slice them in half and place them on a baking dish. Broil for 10 minutes, or until charred. Transfer them to a food processor. Add in the remaining ingredients and process until smooth. Refrigerate overnight to allow the flavors to marry together.

3. Watermelon Salsa

Serves about 10

Ingredients:

Directions: Add all ingredients to a bowl and toss until evenly combined.

4. Grilled Peach Salsa

Serves about 5

Directions: Cut the peaches in half and grill for 3 minutes on both sides.

Let cool and then chop. Add the remaining ingredients and toss until evenly combined.
