Fresh Strawberry Recipe Atop Summer Pasta
Fruit and pasta are not your typical partners in crime in the kitchen (or anywhere else really), but perhaps this summertime fresh strawberry recipe with spaghetti will tantalize your taste buds. Fresh, organic strawberries are in season now, so why not take a walk on the wilder side and try a very unique, savory strawberry dish? When paired with balsamic vinegar, tomato puree, garlic and Italian herb, the sweetness of strawberries comes out in an entirely new way. Fresh Strawberry Recipe Atop Summertime Pasta
Serves 3-4
Ingredients
1 lb. organic spaghetti and water for cooking it
4 tablespoons organic extra virgin olive oil
4 cloves organic garlic, minced
1 lb organic fresh strawberries, halved
Handful of fresh herbs like basil, oregano, thyme and marjoram, chopped
Black pepper and salt to taste
½ cup organic tomato puree
3 tablespoons organic aged balsamic vinegar
Directions
Heat the olive oil in a saucepan and begin heating your pasta water. Sauté the garlic in the oil until it is soft. Add the halved strawberries and herbs and cook until the strawberries have darkened and softened a little. Add the tomato puree to the saucepan and let the sauce simmer until it has thickened slightly.
During the simmering time you should have boiling water for your spaghetti, which you should cook according to the directions on the packet. (Different types of spaghetti have differing cooking times.) Drain the spaghetti in a colander and place it on your serving dish. Spoon the hot strawberry sauce on the spaghetti. Garnish with basil leaves and edible flowers and serve with goat cheese or dollops of mascarpone.
