I love making homemade soup with the freshest ingredients on the market. It’s the perfect weekend cooking project, when I can leisurely chop my way from cutting board to soup pot.
When I’m pressed for time on hectic weeknights, I have no problem buying ready-to-serve organic soups. One of my favorites is Amy’s Thai Coconut, a version of Thom Kha Phak, a traditional dish in Thai restaurants. It’s a delicate combination of organic coconut milk, tofu, lemongrass, shiitake mushrooms, carrots, sweet potatoes and Thai spices. Serve it with a slice of your favorite whole-grain bread, accompanied by an herbal salad.
Amy’s Thai Coconut Soup is available in 14.1-ounce cans, with a suggested retail price of $2.79.
