Meatless Monday: 4 Hard-Boiled Egg Recipes

Yesterday, you probably had at least a dozen hard-boiled eggs hidden all over your garden. Today, they’re in your fridge… it’s time for some hard-boiled egg recipes. Luckily, we’ve got just the thing for you, with four of the very best meatless hard-boiled egg recipes from around the web. You won’t get tired of hard-boiled eggs with these delicious recipes.

First off, consider a classic appetizer: deviled eggs. Here at Organic Authority, ours are spiced up with curry or fresh herbs, for a variation on the classic. Serve them as an appetizer, or make a few alongside a salad for a light lunch.

Doro Wat is a spiced tomato stew, served in Ethiopia. Traditional versions include chicken, but this vegetarian recipe substitutes soy for chicken and the deeply flavored boiled eggs add a unique flavor to the stew. If you’re not a fan of soy-based meat substitutes, you could also serve the eggs with another traditional Ethiopian dish, like lentils stewed in the same sauce.

Egg salad is a fantastic vegetarian sandwich option, with a ton of variations. This sandwich is packed with protein, which will help you stay fuller longer. And with add-ins like jalapeño, herbs and spices to choose from, you’ll never get bored.

For a vegetarian fusion curry, eggs are combined with both Thai and Indian flavors. This lemongrass egg curry is a delight–a perfect meatless meal, and especially considering the not-so-springlike weather we’ve been experiencing so far this season, it’s a great, seasonal way to use up those extra hard-boiled eggs.
