Meatless Monday Roundup: 4 Autumn Hors d’Oeuvre Recipes
This Meatless Monday, consider having a girls’ night! While nights out might usually be more frequently found on your weekend schedule, there’s no reason you can’t have some friends over to talk about the work week ahead over a glass of wine and some tasty vegetarian nibbles. These Meatless Monday hors d’oeuvres are easy enough to serve on a Monday night but tasty enough to make the first day back at work feel special.
1. Homemade Cheese Crackers
Try these homemade cheese crackers (pictured above) which resemble the storebought variety, with a few special twists. Red chili flakes make them more grown-up friendly, and their shortbread texture makes them a surefire special occasion treat. While you can have these ready in under an hour, it’s easier if you make the dough ahead of time. Try cutting them in different shapes for even more fun at the cocktail table. (Image: Melissa)
Fresh roasted pumpkin takes the place of tomatoes in autumn’s answer to summer bruschetta. Pine nuts, garlic and basil come together to season this classic fall ingredient. Served atop your favorite toasted bread, be it store-bought or homemade, it’s a great addition to your Meatless Monday hors d’oeuvre party. (Image: Robert S. Donovan)
3. Spinach-Salad Lettuce Wraps
These lettuce wraps make for a delicious meatless hors d’oeuvre indeed. Filled with a creamy, curried spinach salad and topped with a variety of fresh veggies, these wraps add nutrients that hors d’oeuvres are usually lacking. Serve these up with a pile of cocktail napkins: they may be delicious, but they can get a bit messy! (Photo: the Sandwich Snobs)
4. Vegetarian Scotch Egg
Scotch eggs are a favorite in Scotland; try this delicious vegetarian Scotch egg recipe. A chickpea purée replaces the traditional meat layer of these tasty one-biters. Make them with quail eggs for an even more diminute hors d’oeuvre treat! (Image: Catharine)
