Cinnamon is absolutely delicious when paired with earthy lentils in this cinnamon-scented lentils recipe. The lentils get a bit of heat from poblano and cayenne peppers, while cinnamon is backed up by some other fall spices including nutmeg and allspice. The result is an easy, warming dish perfect for a Meatless Monday supper.

There's no denying that cinnamon goes well with another of our favorite fall friends: pumpkin. This Meatless Monday cinnamon recipe for pasta with pumpkin sauce highlights the savory qualities of the squash with cinnamon, nutmeg, sage, goat cheese and cream. You can't say no! Especially when you know how easy it is to make.

Of course, we're used to cinnamon in sweeter dishes. Our roasted sweet potato side dish is really a cross between a side and a dessert, topped with brown sugar, cinnamon, butter, pecans and cranberries. It's a bit different from more traditional versions of the dish, but you'll love the warming quality of the spices and the slight tartness from the cranberries!

Don't forget dessert! Our vanilla ice cream with a dash of cinnamon is perfect for this in-between season. It's got all the flavors of fall, but it also recalls summer days, not quite entirely gone.
