There’s no denying it; fall is in the air. And what better way to face the change of season than with one of the most essentially autumnal flavors of them all? Not only is cinnamon a delicious fall spice, but it’s also full of health benefits, including pain-relieving and cholesterol reducing properties, not to mention several different minerals. Try some of our favorite cinnamon recipes this Meatless Monday, and rediscover this delicious, warming spice.
Cinnamon is absolutely delicious when paired with earthy lentils in this cinnamon-scented lentils recipe. The lentils get a bit of heat from poblano and cayenne peppers, while cinnamon is backed up by some other fall spices including nutmeg and allspice. The result is an easy, warming dish perfect for a Meatless Monday supper.

There’s no denying that cinnamon goes well with another of our favorite fall friends: pumpkin. Of course, we’re used to cinnamon in sweeter dishes. Our roasted sweet potato side dish is really a cross between a side and a dessert, topped with brown sugar, cinnamon, butter, pecans and cranberries. It’s a bit different from more traditional versions of the dish, but you’ll love the warming quality of the spices and the slight tartness from the cranberries!
