Meatless Monday Roundup: 4 Garlic Recipes

Don’t invited your vampire friends this Meatless Monday — we’re setting the table with garlic! While garlic often gets a bad rep due to the unfortunate smell it can lend to your breath, it’s also very good for you, which is why it’s ideal to include in a Meatless Monday recipe and why we’ve chosen four fantastic garlic recipes to share.
Chock full of vitamins and minerals, garlic is often touted as an anti-carcinogenic, anti-fungal, anti-bacterial and even anti-stress agent! Regardless of its health function, garlic is a delicious aromatic that’s inexpensive and can be used sparingly while still packing a flavor punch.
Start things off with a simple classic that highlights all the flavor power of garlic. Spaghetti aglio e olio is an Italian specialty that features very few high-quality ingredients: its name translates to garlic and oil. Use the best-quality garlic you can find and an excellent extra-virgin olive oil, and bask in the flavors of Italian know-how and culinary simplicity.

The unique flavor and impressive color of black garlic is perfect for this bulgur dish. A popular Japanese and Korean ingredient, black garlic combines sweet and savory flavors, much in the way that roasted garlic does. This ingredient is fermented in order to gain its deep flavor and color. It makes the perfect complement to earthy bulgur wheat and bright, verdant edamame.

Pizza is a fantastic vessel for the creamy, rich, slightly sweet flavor of roasted garlic, and this roasted garlic and spinach white pizza is an excellent way to show it off. By choosing to make a white pizza, the garlic and spinach become the stars of this dish. Add some extra protein by cracking an egg on top of this pizza about 2-3 minutes before it’s done.
