Meatless Monday Roundup: 4 Grapefruit Recipes

There are many reasons why we’d like to feature grapefruit on our Meatless Monday menus this week. The citrus is perfect for post-holiday menus, as it’s light in calories, high in fiber, and curbs hunger, keeping your meals light. But that’s not the only reason we’re excited to be chowing down on this seasonal fruit. It’s also very high in vitamin C, antioxidants and naringenin. It’s the perfect winter fruit for year-round health!
Of course, when you hear grapefruit recipe, you may have a hard time of thinking of anything more than a morning grapefruit sprinkled with sugar. But not to worry — we’ve scoured the web in search of some Meatless Monday grapefruit recipes that are creative, healthful and, of course, delicious!
With its pleasing bitter and sour punch, it’s surprising that people don’t make the association between grapefruit and lemon more often. After all, grapefruit offers only a light additional sweetness, much like Meyer lemon, to any of your favorite lemon dishes, including this grapefruit risotto. Pairing grapefruit and red onion lends a pleasing color balance, while the dry white wine and Parmesan cheese parks this grapefruit recipe firmly in the savory category. Pair your pleasantly bitter risotto with a bitter green like treviso to bring out the best in both dishes. This treviso salad is dressed with a grapefruit vinaigrette that brings out a bit more of the natural sweetness of the citrus thanks to a touch of honey. The addition of almonds means that this salad is perfectly pleasing as a full main course, but pairing it with something warm like a risotto makes it all the more comforting for a Meatless Monday dinner.

An even simpler salad option is this avocado and grapefruit salad, with only four ingredients, provided you can find a tasty storebought dressing. Even if you’re using a homemade vinaigrette instead, this salad is so simple to make, which will make the association of bright, flavorful grapefruit and rich avocado that much sweeter.

For dessert or a breakfast on the go, nothing beats a tasty grapefruit smoothie. A Vitamix is key for this version, which includes raw carrots in the mix. The natural sweetness of carrots and mango should be enough to bring out the flavors of the grapefruit, but if you need a touch more sugar, some maple or agave syrup should do the trick.
