Meatless Monday Roundup: 4 Vegetarian Pasta Recipes


When it comes to pasta sauce, some people have an easy time getting creative in the kitchen. A bit of this, a bit of that, and a Monday dinner is on the table! It’s quick, but it’s not always quite so easy, especially as winter approaches, with its dearth of adequate produce for a truly scrumptious pasta sauce. But have no fear! We’ve rounded up the best in meatless pasta (and sauce) recipes this week. Make tonight vegetarian spaghetti night!

1. Vegetarian Pasta Bolognese

Bolognese is a delicious Italian pasta sauce hailing from Bologna. A little bit of tomato, a hint of milk, and a lot of meat go into the original version. But this delicious lentil ragù is reminiscent of the earthy heartiness of Bolognese without all the meat. For this Meatless Monday dish, red lentils take their place, adding savory flavor. 3. Winter Pasta Recipe

As winter approaches, this winter pasta recipe (pictured at top), is a great one to have on-hand. The base for the puréed sauce is kale, boosted in flavor with garlic and shallots. A hint of lemon and some thyme deliver balance, while the goat cheese adds a touch of tang and a good amount of creaminess. It’s winter’s answer to summer basil pesto, and it’s delicious!
