We all know that breakfast is the most important meal of the day, and we should also be aware by now that it’s important to have protein in the morning to give you energy and keep you full ’til lunch. But as far as meatless protein-packed breakfasts are concerned, ideas may seem limited. Well, no more. We’ve scoured the Internet for 4 protein-packed breakfast recipes that are perfect for any morning, but especially Meatless Monday!

Start the day off right with our very own power smoothie. The basic smoothie recipe is already protein rich thanks to the yogurt, but optional ingredient whey protein packs an extra punch and helps keep you feeling fuller longer.

If you don’t have much time to spare, never fear. Instead of grabbing a store-brand protein bar, make a batch of Alton Brown’s homemade protein bars on the weekend and enjoy them during the week. You know what goes into them — including tofu, soy protein and peanut butter for a protein punch — so you don’t need to worry about artificial ingredients and additives that might be in some brands.

When you’ve got a bit more time, a breakfast burrito is a fantastic way to start your day. This Mexican-influenced dish has both beans and eggs to add protein to the meal. Wrapped in a whole wheat tortilla, it’s a great savory breakfast idea.

If you’re looking for a more gourmet option, either for breakfast or brunch, our scrambled eggs with black truffle oil and avocado are a fantastic option. The truffle oil makes them just a bit decadent, while the avocado adds healthy fats to the already protein-rich eggs.
