Meatless Monday Roundup: 4 Savory Cherry Recipes
Now that May has arrived, a host of different fruits are in our midst. All over the stands of newly opened farmer’s markets and in your local shops, you’re likely seeing the season’s first cherries. While it can be hard to convince yourself to do anything with them aside from eat them fresh off the stems, at least this early in the season, here are just a few of our very favorite meatless cherry meals, perfect for your meatless Mondays.
Our recipe for cherry and mesclun salad is delicious in summer, but it’s just as perfect now. Cherries are perfect with salty mozzarella and a tangy balsamic vinaigrette. Atop mesclun greens, it makes a fantastically complete meal. You’ll love this salad all season long!
Have you ever tried roasting cherries? You’ll be a convert once you’ve tried this roasted cherry salad. Roasting cherries brings out their natural sweetness. With hazelnuts, goat cheese and homemade croutons — as well as the fresh, roasted cherries, of course–this salad is just bursting with delicious flavors.

Our royal rainbow quinoa salad recipe calls for dried cherries, but using this season’s fresh cherries is just as delicious, if not more so. Along with kale, almonds, green onions and quinoa, this salad, with its flavorful vinaigrette, is the perfect meatless Monday meal. Make extra and take the cold leftovers with you to work for lunch on Tuesday!
Speaking of kale, it goes wonderfully with cherries. We love it in this kale, cashew and cherry salad. Tangy goat cheese, nutty cashews and sweet cherries make the perfect complement to the rich, green color and hearty flavor of kale.
