Meatless Monday Roundup: 5 French Recipes

The French aren’t exactly famous for being vegetarian-friendly, but you’d be surprised how many recipes the French kitchen actually has for Meatless Monday. Try out some of our favorites this week… and bon appétit !

Endive, Apple & Walnut Salad

As we approach wintertime, endives are coming into season. Belgian endives are served both raw and cooked in French cuisine; this raw recipe for endive, apple and walnut salad with Roquefort combines the bitter lettuce with sweet apples, crunchy walnuts and flavorful Roquefort cheese. Roasted Organic Beet Salad 

If endive’s not your thing, celebrate Meatless Monday with this delicious roasted organic beet salad with aged goat cheese instead. The pairing of beets and goat cheese is no revolution, but there’s a reason why it’s a kitchen standby. The earthiness unites the two very different ingredients, one sweet, one tangy. Warm French Lentils

To warm things up a bit, consider these warm French lentils. Tiny French Puy lentils are perfect for this salad, which unites the little legumes with some root vegetables and a simple vinaigrette. Red Kuri Squash Soup

Another fantastic fall option for Meatless Monday is red kuri squash soup. Red kuri squash is a popular winter squash in French cuisine, where it’s called potimarron, a portemanteau of potiron,pumpkin, andmarron,chestnut. Its name comes from its flavor, which is like a mixture of these two common fall ingredients. The soup itself plays off this flavor with the addition of toasted pecans, to sprinkle over the top, but feel free to serve it with roasted chestnuts when they become available. Homemade Brioche

For dessert, nothing’s better than a slice of homemade brioche. Brioche is made from a dough enriched with butter and eggs; be sure to work in a cool kitchen for a successful, rich brioche dough.
