These protein-packed cacao-date energy bombs are the perfect way to keep your body sustained and your mind focused--without the sugar crash from other sweet snacks. This kick-ass recipe gets its sweetness solely from dates.
Enjoy them as a snack before or after your workout, a pick me up in the middle of a long work day, or as a healthy and nutritious dessert to satisfy your sweet tooth. This is a completely raw and vegan recipe, but is guaranteed to be a favorite for everyone.
Vegan Cacao-Date Energy Bombs
3/4 cup organic pecans or walnuts
2-3 tablespoons organic nut butter of choice (we like cashew butter)
1 tablespoon melted organic coconut oil
2 cups pitted organic Medjool dates
1/4 cup organic cacao powder (or carob powder - you may want to add a bit of sweetener if using carob)
1 teaspoon organic vanilla extract
1 teaspoon organic cinnamon
pinch of salt
1/3 cup organic shredded coconut (optional)
Combine all the ingredients above except for the shredded coconut in a food processor or high power blender. Use a spatula to scoop the mixture into a bowl and make sure all the ingredients are evenly blended. Use your hands or two spoons to make small balls or dollops to place on a cookie sheet. If you want to include the shredded coconut, spread it on a plate or countertop, and lightly roll each ball in it before placing on the cookie sheet. Either enjoy immediately or refrigerate until you do!
