2 Ingredient Gluten-Free Almond Butter Cookie Recipe
This almond butter cookie recipe is made with just two simple ingredients: almond butter and egg. Yum! And not only is almond butter delicious, it also is incredibly good for you. Almond butter is high in vitamin E, an antioxidant which has healing properties, and may even help to reduce the risk of lung cancer.
My sister shared this super simple and delicious cookie recipe with me. You can also make these cookies with peanut butter. But while both nut butters are high in protein (an ounce of nut butter is the protein equivalent to the same amount of meat) and fiber, almond butter is significantly higher than peanut butter in vitamin E, magnesium and iron. Choose or make a nut butter that’s as minimally processed as possible. Raw organic almond butter is best.
Be sure to try a cookie before bedtime. Two tablespoons of nut butter before bed (or a sugarfree cookie like one of these almond butter cookies) can help your sleep by stabilizing your blood sugar. Unstable blood sugar can make it difficult to sleep. The magnesium in almond butter also promotes sleep and muscle relaxation.
Almond Butter Cookie Recipe
Serves 4, about 16 cookies

Method
Mix ingredients together until well combined.
Prepare a cookie sheet with parchment paper and drop mixture onto the sheet by the heaping teaspoonful.
If you want fancy fork marks, freeze the batter on the sheet for about 1 hour. When you get the unbaked cookies out of the freezer, preheat your oven to 350 degrees Fahrenheit.
Lightly press cookies down with a fork (crosshatching the fork marks on top to make a checkerboard pattern).
Bake at 350 degrees Fahrenheit for 5-10 minutes. Let cool and serve.
