Easy Cucumber Yogurt Tzatziki Recipe

If you’ve never tried to make your own tzatziki, you may be surprised by how simple it is to throw together. All it takes is yogurt, diced cucumber and a few seasonings to pack that powerful tzatziki flavor punch. Traditionally a Greek and Turkish appetizer (in Turkey it’s called cacik), tzatziki is also the sauce you may know and love from gryos and souvlaki. Whip up this tzatziki recipe in less than 20 minutes and serve it with pita bread or as a spread for sandwiches and burgers. It even makes a deliciously different dip for french fries.

Crunch. Chomp, chomp, chomp. “More, please!” That’s the sound of my 4-year-old eating entire cucumbers by herself from the garden. This is mostly a good thing. If I can sneak one cucumber past her, the whole family can enjoy one of our favorite condiments, this simple but delicious tzatziki recipe.

Easy Tzatziki Sauce

Serves 6, about 1 1/2 cups

Ingredients

1 medium English cucumber, peeled, seeded and finely diced
1 teaspoon Kosher salt
1 cup Greek yogurt (or strained homemade yogurt)
2 cloves garlic, minced
1/4 teaspoon dried dill (optional)
Juice of 1 lemon (about 1/4 cup)

Directions

Toss cucumber with salt and let sit in a colander for 10-15 minutes. Transfer cucumber to a bowl. Add yogurt, garlic, dill and lemon juice. Stir to combine.

Serve cold.

Try your tzatziki with veggie kebabs or slathered on top of a grilled portobello mushroom cap for a great new vegetarian option at your next barbecue.
