Gorgonzola Bruschetta

This recipe is incredibly simple to prepare. It may take all of 15-20 minutes, if that. In the summer I add grilled stone fruit like peaches, nectarines, apricots or plums which add a wonderful contrast to the saltiness of the gorgonzola cheese.

Serves 6-8 as an appetizer

Ingredients:

1 Baguette – sliced on the diagonal into in 1/4″ – 1/2″ slices (about 10 – 12 slices)
3-4 tablespoons olive oil
4-6 oz of soft Gorgonzola
honey – enough to drizzle over bruschetta slices

Method:

Preheat oven to 400°

Lay out slices of bread on a cookie sheet or on a pizza stone. Brush bread with olive oil. Spread cheese on the bread.

Toast in oven about 2-3 minutes. Remove toast when toast is golden brown and cheese is beginning to melt and lightly bubbling.

Drizzle honey over bruschetta, serve immediately.
