Nondairy Chia Pudding Recipe: Paleo, Kid-Friendly and Super Easy to Make!

Ch-ch-ch-chia is an amazing tool for thickening jams and puddings. This nearly instant chia pudding recipe is delicious, Paleo and kid-friendly!

Vanilla Chia Pudding Recipe

Makes about 3 cups

Method

To make the pudding add 3/4 cup coconut/almond milk into a high speed blender. Now add the rest of the ingredients, including the coconut/almond milk ice cubes and the chia.

Blend on high until smooth. Enjoy immediately or chill in the fridge where it will thicken up even more with the chia’s thickening super powers. Top as desired with fruits, nuts, coconut shavings or whatever you like on your pudding.

To make chocolate flavor, add cocoa powder to taste. With the ice, the chocolate flavor tastes a lot like a frosty without all the junk!

If you’d rather chill the pudding the regular way, skip the ice cubes and add the same amount in unfrozen coconut/almond milk. Chill in the fridge until thickened.

If your dates are firm, soak them in hot water for at least 30 minutes before you begin. Drain well.
