Vegan ‘Meatloaf’ Recipe with Sweet Cider Glaze
Contrary to popular belief, vegan recipes can qualify as comfort food. This vegan “meatloaf” is testament to just that. It’s bursting with flavor and paired with a delicious tomato maple cider glaze that will give ketchup a run for its money.

Vegan “Meatloaf” Recipe

Preheat the oven to 375 degrees Fahrenheit. Lightly grease a 9-inch bread pan.
Add all of the loaf ingredients into a food processor and blend until well combined. You will have to do this in batches. After you process each batch, place the mixture into a large bowl. Do not aim for a smooth consistency – you want there to be texture to the mixture. Once all the batches are finished, use a spatula or clean hands to properly fold all the ingredients together.
Press the mixture into the bottom of the bread pan, pressing it down so that top is smooth and level. Place the pan into the oven and bake for 25-30 minutes.
While the loaf is baking, prepare the glaze. In a small bowl, whisk together the glaze ingredients.
After 25-30 minutes, remove the pan from the oven and spread the top of the loaf with the glaze. Return the pan to the oven for another 25-30 minutes. After the meatloaf has cooked, remove the pan from the oven and let sit for 10-15 minutes before cutting and serving. Enjoy!
