Peel the carrots, but leave a little of the green stalk at the top. Place the carrots in the center of a hot grill (or on a hot grill pan – we love this blue carbon steel one from Made In) and brown thoroughly on all sides. Transfer the carrots to a platter, drizzle with the honey and sprinkle the dill and salt on top. Serve this dish warm.
Other vegetables are also complemented in taste by honey, like beets, fennel, parsley root, and rutabaga.
