Directions

In a large pot, add the vegetable broth, beets and potatoes. Bring to a boil and reduce to a simmer. Cover with a lid and cook for about 20-30 minutes or until the beets are cooked through and tender. Add the cabbage, scallions, vinegar, salt and pepper. Simmer for 20 more minutes without the lid. Remove from the stove and ladle the soup into a blender if you want a creamy, thin texture. Just make sure the soup has cooled a bit before mixing. Otherwise, serve it chunky and optionally serve with crème fraîche. Garnish with fresh dill.
