Zesty Grilled Chicken Recipe with Minty Yogurt Sauce

Serves 5-6
Ingredients
6 organic half chicken breasts, boned
salt and pepper to taste
Minty Yogurt Sauce
1 cup organic yogurt (cow, goat or soy)
3 cloves organic garlic, minced
2 teaspoons organic ginger, freshly grated
3 organic limes (save one for garnish)
1 cup fresh mint leaves, chopped
Method
Prepare the chicken by sprinkling both sides with salt and pepper. Set in a glass dish and sprinkle a bit of lime zest on each half breast.
Combine the yogurt, garlic, lime juice, ginger and mint leaves in a small bowl. Spoon the mixture over the chicken and let it marinate in the refrigerator overnight.
Preheat your grill, and once very hot, transfer the chicken on to the grill with a slotted spoon. Pour the leftover yogurt sauce into a small saucepan. Grill the chicken until it is tender, about 10 minutes per side. Gently heat the yogurt sauce.
Once the chicken is done, place it on a serving platter and spoon the warm yogurt sauce on top. Garnish with lime wedges and any leftover mint leaves. Serve with a summer salad and grilled veggies alongside couscous if you’ve got a hungry crowd.
