This year, the first official day of fall falls on a Meatless Monday, so what better way to celebrate the season than with one of our favorite autumn foods?
These sweet potato recipes are sure to get your creativity going. We love sweet potatoes, not just for their bright orange color and subtle sweet flavor, but also for their beta carotene content, which has been proven to raise the vitamin A levels in your blood. Just one good reason to include sweet potatoes in this week's Meatless Monday meals.
While we're still on the tail-end of summer, it's fun to include a burger in the mix. These sweet potato and chickpea burgers (pictured above) are topped with a flavorful tahini yogurt that make them very distinct from the burgers you may have been enjoying all summer. You can serve them as a patty without the bun if you want a lower-carb or gluten-free version, or you can choose your favorite homemade or store-bought bun recipe as the base.
Our Hawaiian sweet potato and quinoa pilaf takes a completely different approach to cooking with sweet potatoes, uniting a host of tropical flavors, including coconut, macadamia nut, and citrus. A quinoa base is the perfect support to these unique players, and the addition of greens not only makes the colors pop but adds a few more nutrients to the dish.

Risotto is kind of famous for being finicky, but this recipe is different. Our sweet potato and barley risotto is super easy to make. Because the barley is pre-cooked, you only need to actively stir for about 10 to 15 minutes, making this dish completely weeknight-friendly and perfect for Meatless Monday.
