5 Delicious Avocado Toast Topping Ideas

Avocado toast has been making the rounds lately. It can be found in many trendy eateries and is praised by many home cooks for its simplicity and balanced taste and texture. However, avocado toast can go much further than the simple toppings of olive oil, lemon and sea salt. In fact, avocado toast is so versatile, you can eat it every day for the rest of your life and always have a new recipe to try!

The original avocado toast recipe generally involves mashing half an avocado and spreading it over a slice of toasted bread. Then come the sprinkle of sea salt, the drizzle of olive oil and the spritz of lemon juice. The result is absolutely divine – creamy but with a bite and filling but still light. Avocado toast makes for a great daily snack or light meal, because it is loaded with fiber (granted you use a whole-grain bread), healthy fats and protein. It is simply perfect.

But even perfect has to reinvent herself every once in awhile. Here are 5 ways to take the go-to avocado toast recipe and make it drool-worthy.

To get started, here is how to prepare the toast and the avocado mashing.

Avocado Toast Base

Ingredients

  • 1 ripe avocado
  • 2 slices of whole-wheat, whole-grain or sprouted bread, toasted

Directions

Scoop out the avocado flesh of half the avocado onto one toasted piece of bread. Use the flat end of a fork to lightly press and mash the avocado across and onto the bread evenly. Repeat with the other piece of bread and the remaining avocado.

Once you have the two avocado toast bases prepared, choose among the 5 following topping options:

1. Smoked Salmon Avocado Toast

Assemble 2 smoked salmon slices, a handful fresh spinach leaves, a few sprigs fresh dill, 8 slices cucumber, sea salt and pepper. Spread the spinach leaves atop the avocado layer of each toast, then top each with four cucumber slices, 1 smoked salmon slice and a sprig or two of dill. Season with sea salt and black pepper.

2. Blue Cheese Avocado Toast

Assemble 4-6 ounces blue cheese, 4-6 cherry tomatoes, handful of fresh arugula, sea salt and pepper. Add the blue cheese to each slice and place in a broiler for 30 seconds to 1 minute, or until the blue cheese softens and melts a bit. Lightly chop the arugula and quarter the cherry tomatoes. Add the arugula and then the tomatoes atop the blue cheese. Season with salt and pepper.

3. Apple Bacon Avocado Toast

Assemble 2 strips of bacon, 1/2 apple, sea salt and pepper. In a small saucepan, cook the bacon until crisp. Remove from pan and chop the bacon into small pieces. Slice the apple. Add the apple slices to the toasts and then top with crumbled bacon. Drizzle the remaining avocado toasts with reserved bacon drippings. Season with salt and pepper and voila!

4. Mushroom and Honey Avocado Toast

Assemble 8-10 portobello mushrooms, 1 tablespoon olive oil, 3 ounces crumbled feta cheese, 1 tablespoon honey, sea salt and pepper. Thinly slice the mushrooms. In a saucepan over medium-high heat, add the olive oil and mushrooms. cook for 5-8 minutes, or until the mushrooms are cooked through and have reduced in size significantly. Add the mushrooms to the toasts, sprinkle with the feta cheese, drizzle with the honey and season with salt and pepper.

5. Eggs and Sriracha Avocado Toast

Assemble 2 eggs, sriracha, sea salt and pepper. Place a non-stick frying pan over medium-low heat. Crack the eggs into a pan over medium-high heat, season with salt and pepper and cover. Cook until the whites are cooked through and yolk is still runny. Place the eggs on top of each slice of toast. Drizzle each egg with Sriracha to taste. Season with salt and pepper and serve.
