Meatless Monday Roundup: 4 Avocado Recipes

Do you love avocado? You’re not alone! This superfood fruit is full of healthy fats that are great for your hair and skin, not to mention the lutein which helps with eye health and more fiber than any other fruit. Of course, on top of all of those benefits, avocado is particularly delicious and versatile. It has a creaminess and a mild flavor that makes it ideal for use in both sweet and savory recipes… which is why we’re setting our Meatless Monday table with avocado recipes this week.
Some are surprised by the use of avocado in sweet preparations, but there’s no need to be. The botanical fruit is, much like tomato, more frequently used in savory dishes, but also like the tomato, it can be just as delicious when sweetened up just a bit. Our selection has both sweet and savory avocado recipes to enjoy on your Meatless Monday table.
Start off with our South American inspired avocado and quinoa salad up above. Quinoa hails form Bolivia, where it is often combined with creamy avocado and a touch of chili pepper for a nice kick. In this salad, you have the choice of using fresh chiles, which is a touch more traditional, or chili powder, which is way more convenient. Either way you serve it, this salad is a great idea for a pack-and-go lunch for kids and adults alike.

While traditional pesto is made with basil, creamy, green avocado can make a fantastic addition. This avocado pesto uses avocados to add the creaminess that cheese usually lends, making it a vegan-friendly version of the tasty Italian sauce.
