GreenPan Valencia Pro Review: Why It’s a Win for Modern Kitchens

When I started Organic Authority, finding truly safe nonstick cookware felt like searching for a needle in a haystack. Traditional nonstick pans were everywhere, but they were made with synthetic PFAS chemicals. What most consumers didn’t know was that those pans could release chemical fumes when overheated and leach toxic ‘forever chemicals’ into your food when scratched. Not exactly what you want near your carefully sourced, organic ingredients.

The “safe” alternatives weren’t much better. They often didn’t perform well, were flimsy and full of hot spots, or the nonstick coating was so bad you were lucky if it lasted three months. Making my favorite classic rolled French omelet was nearly impossible in these early alternatives. Talk about frustrating.

My Experience Cooking with GreenPan Valencia Pro

GreenPan’s Valencia Pro collection has been around for roughly 10 years. I’ve been testing it since its initial release, and I feel like the collection just keeps getting better as GreenPan innovates. They’ve introduced new colorways, a version with a stainless steel body, and refinements to the coating that have made a real difference in everyday performance.

Here’s What I Tested in the Valencia Pro

These pans aren’t just excellent for cooking the delicate items that nonstick cookware is known for, like fish, eggs, pancakes, or even French Toast. They also excel at browning proteins like chicken and burgers, as well as searing veg like zucchini, kale, Brussels sprouts, and more. And when properly taken care of (see more on that below), these pans have lasted me years. 

Most nonstick cookware is best suited for delicate items like eggs, pancakes, and fish, plus simple tasks like reheating food. Usually it doesn’t add any of that crave-able texture to food because ideally, they should only be used over medium to medium-low heat. In a lot of cases, food cooked with these restrictions ends up becoming a sad, soggy meal. 

Creating that desired texture usually comes from higher-heat cooking methods, which typically aren’t suited for nonstick cookware. High heat can burn up nonstick coatings fast, shortening the life of the cookware.

But with the Valencia Pro pieces, I was seriously impressed with how much I could do. I was able to create a crusty caramelized exterior on my salmon, burgers, and veg. Why is that crust so important? Well, to put it simply, texture is the conductor of flavor — no texture, no flavor. The results were deeper and richer than you’d expect from ceramic nonstick.

Features I Love

I love the wide base and the curved sides of the Valencia Pro frypans. I like to cook eggs in the 8” frypan so I have better control over both the eggs themselves and the temperature of the pan. I cook other larger items like fish, chicken, and veg in the 12” frypan so I have a wider surface area, meaning I can cook food in one layer for effective browning. And the curved walls make it easy to flip food when I’m feeling chef-y. 

The Valencia Pro also has an incredibly comfortable handle. The soft, curved design fits comfortably in the hand in a way that square or angular handles simply don’t, and it’s long enough to keep your hand safely away from the heat. You’d be surprised at how much difference a comfortable handle makes in your cooking experience!

Another important feature is that it’s oven-safe up to 600°F. I’ve yet to meet another ceramic nonstick (or any nonstick pan!) that can tolerate oven temperatures this high. This feature also makes this pan ideal for oven-baked meals like this creamy zucchini frittata, a baked egg dish like a Shashuka, a Dutch baby pancake, a large skillet cookie, or proteins that you want to finish in the oven like a chicken breast, beef, or fish.

Here’s What the Ceramic Nonstick Coating is Made of (and What It’s Not)

The Valencia Pro features Thermolon™, GreenPan’s proprietary diamond-infused ceramic nonstick coating. The base ingredient is silicon, derived from sand, which gets mixed with other inorganic ingredients and minerals to create a nonstick surface that doesn’t rely on PFAS, PFOA, PTFE, lead, or cadmium. Plus, the diamond dust makes the coating more durable and less susceptible to scratching. The heat conduction properties of diamonds also help eliminate hotspots and reinforce the structure of the coating. 

This is fundamentally different from PTFE-based coatings like Teflon. The problem with Teflon or other PFAS-coated nonstick cookware is twofold. When scratched, these coatings can release thousands of plastic particles into your food (that’s not an exaggeration — a study found one scratch on a Teflon pan can release 9,000+ particles)1. When overheated, the fluorinated polymers in their slick surface can break down and release toxic fumes that lead to polymer fume fever, also known as ‘Teflon flu,’ which causes symptoms like chills, fever, headache, and body aches that can last between 12–48 hours.

Thermolon’s silica base means that when the ceramic coating eventually wears down (as all coatings do over time), it simply becomes less effective at preventing sticking. It doesn’t release PFAS into your food or toxins into the air. That distinction matters.

The Valencia Pro frypans come in three sizes, 8″, 9.5″, and 11″, and each has a distinct role in the kitchen. The 8″ is my go-to for morning eggs and quick sautés; I love the control it gives me over heat and technique. The 9.5″ is the everyday workhorse for most weeknight meals. Finally, the 11″ is where larger proteins, fish, and anything that needs serious room to brown really shine — and where that caramelized crust we keep talking about gets to do its thing.

The 5.5-quart stock pot is where the GreenPan Valencia Pro line really shines for family cooking. I’ve made everything from bone broth to wintry stews in this pot, and the ceramic interior makes cleanup super easy even after cooking sticky sauces, grains, or pasta dishes.

The capacity is generous without being unwieldy, and the hard-anodized construction means it heats evenly from bottom to top — crucial for preventing scorching when making large batches of soup or sauce.

The Glass Lids

These tempered glass lids might seem like a small inclusion, but they make a real difference in everyday cooking. Being able to check on braising vegetables or simmering sauces without lifting the lid helps maintain consistent temperature and moisture levels.

The GreenPan Valencia Pro lids all have stainless steel handles designed with a V shape, which helps reduce heat transfer to the handle. I do still recommend using a hot pad or dish towel to move it around — IMHO, I’d always rather be safe than sorry. Note that the lids are dishwasher-safe and oven-safe up to 425°F (vs. 600°F for the pans), so be conscious of this when it comes to oven recipes.

The 11″ Valencia Pro Grill Pan brings authentic grill marks indoors without the need to fire up an outdoor grill. I’ve used it for everything from halloumi cheese to zucchini, and the ridged surface helps produce a genuine sear that adds both flavor and visual appeal.

Ceramic nonstick cookware is forgiving to clean, but a few habits make a real difference in how long the coating lasts.

Though the Valencia Pro is technically dishwasher-safe, I strongly recommend hand washing to protect the coating’s longevity. Regular dishwasher use will shorten the life of the ceramic nonstick coating — potentially by years. Warm water, a mild dish soap, and a soft sponge are all you need for everyday cleanup.

A few other habits worth building: don’t stack your pans without the included pan protectors, and avoid abrasive scrubbers or harsh detergents. These small things don’t feel important until you realize your coating has worn out six months earlier than it should have.

HOT TIP: Clean your cookware while it’s still warm — don’t let it sit (my mom taught me this). Add a little warm water to the pan right away and use a wooden spoon to lift any stuck-on food. It really works. For tougher spots, a small amount of baking soda with a gentle scrubbing motion will take care of the rest without damaging the coating.

Especially given the slick coating, warm water, mild soap, and a soft sponge are genuinely all you need.

Can the glass lids be used in the oven?

Yes, the tempered glass lids are oven-safe up to 425°F, which covers most braising and baking tasks. The temperature limit is lower than the cookware itself (600°F), but it’s still sufficient for the majority of oven techniques. The stainless steel rims also prevent warping at high temperatures.

Is it durable?

In short, yes. In the many years I’ve been cooking with the Valencia Pro, not once has the exterior or rim chipped or cracked — which ceramic nonstick cookware is typically famous for. It’s probably the most durable ceramic nonstick I’ve ever cooked with. Seriously. Just be sure to follow the proper care and cleaning tips and these pieces should last years.

Do you need oil?

Yes, even with the nonstick coating, you do still need a bit of oil. For the best results, preheat the pan for about a minute, then add your fat or oil, heat that through (look for the shimmer), and then add your food.

Should You Buy It?

So, what’s the final takeaway of this GreenPan Valencia Pro review? After years of testing this line in my own kitchen, I can confidently recommend it to health-conscious cooks who want reliable, safe, and beautiful cookware. The Thermolon™ ceramic coating won’t last as long as stainless steel — no ceramic coating will — but the lack of PFAS, the induction-friendly Magneto™ base, and the thoughtful design make it a compelling choice for modern kitchens that prioritize both performance and health.

This cookware set is ideal if you:
